Yes, we "know" your IP when you access our website, but we don't associate it with your email or use it for anything and eventually we delete all the records.
We'd gladly deprive ourselves of this information if we could, but it's technically impossible. Let's say we put a proxy in front of the website, then the proxy "knows" you IP and since the proxy is ours we "know" it too. If you'd like to hide your IP address from us you'll need to access our website using a third-party proxy service. You can find plenty of them by googling for "anonymizer". Or better yet, use TOR.
